Until…The final of the Great British Bake Off called for something cosy to keep our tummies from grumbling as we eagerly awaited who would be crowned this years champion. This lentil and chicken recipe is just so simple and rather numma too. Just the ticket for a cosy night in.
This dish is right up the Paleo diet’s alley. You might well ask what the feck is a coodle? Well the answer is.. it’s a cucumber noodle. Turning cucumber into stringy noodles adds texture and substance to this salad. It’s a really winning combo that is pretty slimming and takes minutes to make. I am determined this year not to be a heffer by Christmas and I think this recipe might be one I return to again and again on my quest not to melt to fat over the winter.

This recipe is a bit Scandi and a bit different. It was literally created on the back of a craving I had for something fresh and palate cleansing for supper. The rich and flakey smoked trout combined with cooling cucumber is a real winner. Ideal for a light lunch on a summer’s day, a starter at a dinner party or a simple supper. Take your pick.
