Eggs and anchovies are a well known match made in heaven. This simple supper spruces up your ordinary scrambled eggs… go on try it!
- 2-3 eggs per person
- 1 piece of bread
- 2 anchovies in oil
Whack your bread in the toaster, for a short period. You want it lightly cooked but its going under the grill later so not too brown. Meanwhile, mince your anchovies in a bit of their oil until they form a rough paste, and then slather on your piece of toast.
Bung this under the grill for about 1 min. While your toast is grilling make your scrambled eggs with a bit of butter, making sure not to over cook them – nothing worse. Then pile on top of the anchovy toast and devour! YUMMA.
