Parsnip rosti with roast onions, tomatoes and yog

This is such a good and simple recipe. Made in minutes, it’s the perfect supper for a busy worker on a weeknight.

All you need:

  • 1 -2 parnsips
  • 1 egg
  • 1 heaped dessertspoon of plain flour
  • handful of cherry tomatoes
  • half a white onion
  • 1 tbsp of natural probiotic yoghurt

Whack the oven on to 200 and then shove in the onion, roughly chopped and smeared in oil, and the tomatoes with a sprinkling of chilli flakes if you are that way inclined. Meanwhile, grate your parsnip and combine with the egg and flour and then fry in a little bit of oil until crisp, roughly 4-5 minutes on a low heat. Flip and fry on the other side for the same amount of time.


Then all thats left to do is smother the rosti in yog…


And top with the roasted veg, a pinch of sumac and some more yog. Supper is served.
