This little supper is part of my New Year’s diet plan. Tonnato is a tuna based sauce that the Italians slather over veal usually. This recipe had piqued my interest. However, the veal had to go as it’s not an ingredient I can pick up easily, and YummaNumma is all about simple suppers for busy people. So I created this slimming recipe… coodles (cucumber noodles), deliciously soft boiled burford browns, tonnato sauce and crisp capers.
To make the tonnato you need (this will make masses but it’s a great alternative to salad dressing so it’s useful to have extra hanging about):
- 1 tin of tuna
- 2 anchovy fillets
- 2 tsp of capers
- 3 tbsp of mayonnaise (or greek yoghurt if you are feeling healthy)
- zest and juice of 1 lemon
Extras to complete the masterpiece include:
Number one – boil your eggs for 6 minutes.
Then spiralise your cucumber and set it aside. Make your sauce by blitzing all the tonnato ingredients together until it forms a smooth pale pink sauce. All that’s left to do is put it all together. Start with coodles…

Cut your eggs up and bung them on top…
