Eggy bread with crispy bacon and maple syrup

Sat brunch/brekka is my favourite part of the weekend and this eggy bread recipe is a winner. Flipping delish… nuff said.

For two people you will need:

  • 3 eggs
  • 2 large slices of white bread
  • 6 rashers of streaky bacon
  • maple syrup
  • knob of butter

Crack the eggs into a shallowish dish…

Whisk them up with a fork and then lay your slices of bread on top. Prick the un-egged side with a fork and leave for about 5 mins. After five minutes flip the bread over and leave to soak for another 5.

Meanwhile, fry up your bacon so she’s real crispy…

Whip the bacon out the pan and keep her warm somewhere. Drain away the bacon fat, but don’t bother washing up the pan. Add a knob of butter and let her melt…

Once the pan is quite hot again chuck in the slices of eggy bread and fry for about 3-4 mins on each side on a medium heat.

When its cooked, top with crispy bacon and add lashings of maple syrup….
