This recipe from the Londoner is comfort food in a bowl. She’s cosy, warm and tastes LUSH. For 3-4 people you need the following:
- half a rotisserie chicken
- egg noodles
- thumb sized piece of ginger
- 5 spring onions
- 1 chilli
- 2 cloves of garlic
- 1 pint of fresh chicken stock plus some boiling water
- a splash of fish sauce
- a splash of soy sauce
- 1 tin of sweetcorn
- sesame oil
Gently sweat the spring onions, chilli, garlic and ginger in the sesame oil until nice and soft.
Pull the chicken off the bone and throw this is in the pan and give it a good coating in all the garlicky, sesame deliciousness.
Add the stock, fish sauce and soy and then the sweetcorn. Bring this to the boil and then add the noodles.
Cook until everything is succulent and delicious. Spoon into bowls and call yourself a culinary goddess.
