I was so lucky to celebrate the wedding of two great friends from my ski season. In true Sophie and Russell style, they threw the most insane party and I was left feeling rather worse for wear on Sunday. I made my way back to London nursing my head and concentrating on the one thing that would make me feel better…creamy tomato pasta with a full fat coke.
For the pasta you need:
- spaghetti or pasta of choice (I went for the fresh stuff)
- 1 tin of tomatoes
- 1 onion
- 1 clove of garlic
- 1-2 anchovy fillets
- tomato puree
- a decent splurge of double cream
Finely dice your onion and fry until soft. Add the garlic and anchovies and stir until its all melted together. Don’t worry you don’t taste the fish but these fillets add the saltiness that makes this sauce so welcome when feeling fragile.
Tip in the tinned toms and puree and leave to reduce a bit.
Meanwhile get your pasta on….
Once the pasta is cooked, return to the sauce and add the cream.
Tip in the pasta and give it all a good stir…
Top with plenty of grated cheese and a decent glug of olive oil or a knob of butter.
Crack open that coke can and enjoy this bowl of heaven while feeling very sorry for yourself.
