Skinny mexican pesto, prawn and avocado bowl

A delicious post-exercise salad bowl that combines some of Mexico’s classic flavours like lime, coriander and avocado. I’ve recently booked my flights to Texas in December and have been dreaming of Tex Mex food ever since. But I am trying to have a few healthy days ahead of the weekend and this is a great carb free supper that really packs a punch.Β 

For the pesto you need:

  • handful of coriander
  • handful of parsley
  • handful of cashew nuts
  • 1-2 chillies
  • 1 garlic clove
  • splash of hot sauce
  • juice of 1 lime
  • 1 tbsp of parmesan
  • 2 tbsp of olive oil

Blitz all of these ingredients together in the magimix to form a glorious green pesto that tastes a bit like a sunny Mexican beach…It will make enough for at least 3 portions, but what you don’t use smother over fish or steak or dollop inside wraps filled with avo and chicken.

Once that’s done turn your attention to the extras… you will need:

  • 1 small avocado
  • 5 or 6 cooked prawns
  • 5 cherry tomatoes
  • less than a quarter of red onion
  • wedge of lime
  • coriander for decoration

Slice or dice your avo….

Then add the cherry toms and finely diced red onion…

Next add the prawns…

Add a large dollop of pesto to the bowl and then give it a mix.

Finally finish with a few coriander leaves and wedge of lime.

It’s so simple and seriously scrum. Β If you wanted to beef this out why not add some quinoa?
