Cosy and comforting, cheese on toast is always welcome. We made this over the bank holiday weekend in Aldeburgh, to enjoy on our laps as we watched Magic Mike (nothing like the Full Monty… and actually a really crap film, but this isn’t a film review blog so will stop there.) A simple recipe which uses ingredients you are bound to have lying about. Want inspiration for supper tonight… Why not give this a go?
For two people:
- 2 decent slices of white bread
- plain flour (about 1 dessertspoon)
- roughly one cup of milk
- masses of cheddar (such a great shop)
First things first is to make a cheese sauce. Melt a decent knob of butter in a pan….
Then add the flour and cook this for about one minute. This takes away any taste of flour later on.
Grab the milk and combine this slowly off the heat, before whacking it back on the heat and stirring until the sauce thickens. You want a pretty thick sauce.
Take the white sauce off the heat and bung in a mass of grated cheddar and stir until it’s all melted in. Taste and then season accordingly, because cheese is pretty salty.
Meanwhile, toast and butter you bread…
And then pour over the cheese sauce. Top with another decent handful of grated cheddar.
Whack this under the grill for about 5-6 minutes, until the cheese is blistering and turning a delicious golden brown.
Serve with a salad and a glass of wine. Blissfully indulgent and comforting. Yum Scum.
