I left Tuscany and went straight on to meet my family on Heir Island, county Cork. I’ve been coming here since I was born, and while totally different from Tuscany, it is every bit as beautiful in its own right.
Despite the rain, we pulled on our full wet weather kit and set off on a fishing trip. When I say fishing, I mean dangling lines off the side of a boat, rather than with rods etc. But to our joy we caught three beautiful mackerel.

Then we just prepared them extremely simply. I scored the flesh three times on each side, stuffed the cavity with lemon slices and then generously sprinkled salt and pepper on either side.
Slap on a bit of olive oil over the fish and then whack them under the grill for about 4-5 minutes on each side.
Simple, but utterly delicious. From the sea to the table in all of 1 hour, it doesn’t get much fresher than that.
