I am off on hols this weekend to Tuscany, so in a last minute attempt to get bikini-body-ready, I whipped up this delicious, but on the lighter side, salad to have for supper. You could always add mozzarella for a bit of indulgence too. Serve it as a side to BBQ meats or enjoy it on its own, whatever you decide, I hope you’ll agree that it’s delish.
- 1 peach
- handful of rocket
- 3 slices of parma ham
- 1 tbsp of creme fraiche
- small handful of basil
- quality olive oil (I used this amazing oil we bought at Taste of London)
It’s so simple, just cut your peach in half and then cut into segments.
Finely chop the basil and mix with a glug of olive oil and the creme fraiche.
Then its just simply a case of arranging beautifully on the plate, seasoning with salt and pep and adding another little drizzle of olive oil.
So few ingredients, so simple, utterly numma and looks impressive too. Winner.
