You can never buy just one courgette…It’s a total pain. But not this time! This should be a go to for everyone, whether you decide it’s a delicious supper or a packed lunch. It uses turkey which is naturally low in fat and there is no need for carbs, making this super healthy. But don’t fret, just buy a bap and it’s perfect for the hungrier mouths too. Go on try it… You really wont regret it.
For 8 large burgers or 10 smaller ones:
- 2 courgettes
- 500g free range turkey mince
- handful of coriander
- handful of mint
- 2 small chillies
- 1 egg
- 2 garlic cloves
- 3 spring onions
Whack the oven on to 180. Job done. Then grate your courgette and dice the spring onions (I used my kenwood because I’m lazy.)
Wrap the courgette in kitchen towel and squeeze the sh!t out of it. It needs to be as dry as possible. Combine with the turkey, herbs and garlic which you have finely chopped. Crack in the egg and give it a gentle mix, be careful not to overwork.
Shape into patties and bung in the fridge for 1 hour minimum or about 20 mins in the freezer so that they are nice and firm.
Fry the patties in olive oil for about 2 mins on each side so they form a crust. Then whack on a baking tray and throw into the oven for about 15 minutes (depending on their size.)
Meanwhile, make your salsa and tahini yog. For the salsa you need:
- 2 large tomatoes
- a quarter of a red onion finely diced
- olive oil
Simply dice all the ingredients finely and then drizzle over some olive oil. Leave to infuse.
For the tahini yog:
- 1 large tbsp of greek yoghurt
- 1 dessertspoon of tahini
- juice of half a lemon
- 1 tbsp of cold water
Once again, this is super easy. Just stir all the ingredients together and season accordingly.
Then grab some lettuce leaves and pile a burger onto it, top with salsa and yog and devour. Bloody delicious and I can’t wait to have the leftovers for lunch tomorrow.
