I had a meeting this week which lasted from 12.30 until 4 but they didn’t give us any lunch! When I say I was hungry… I was literally ravenous. By 6pm I was out the door and was whizzing round the supermarket to gather a few ingredients for an early supper/late lunch. I came across this recipe when I was looking at Rose’s blog The Culinary Queen of Pimlico and it’s clearly been lying low in my subconscious since because it was the first thing I thought of in my deliriously hungry state. Piled on top of courgetti, this rich and spicy lamb sauce 100% hit the spot. Blink and you’ll miss it… I inhaled the lot.
For 2 – 3 people (depending on how hungry you are!)
- 3-4 courgettes
- 1 pack of lamb mince, roughly 400g
- 1 tin of tomatoes
- 1 tbsp or decent squirt of tomato puree
- glug of leftover red wine
- 1 white onion
- 2 garlic cloves
- 2-3 chillies (depending on how spicy you like it)
- handful of fresh mint
- handful of basil
- grated rind of 1 lemon
Sweat the chillies, garlic and onion in some olive oil using a heavy bottomed pan.
Then add the mince and let it brown before chucking in the mint, basil and lemon rind.
Throw in the tinned tomatoes, puree, slug of red wine and let this reduce for about an hour or as long as you can wait (I couldn’t wait any longer!) Alternatively, you could pile the mix at this point into your slow cooker and leave it all day long…
Spiralise your courgettes and then steam for about 5 minutes.
Pile your lamb on top of the courgetti, top with a drizzle of olive oil, grated cheddar/parmesan and some more fresh mint.
