After a weekend of gorging on all sorts of delicious things, I wanted to detox and needed to refocus as my holiday creeps nearer. This is a great, inexpensive summer soup which you can make for the week. Perfect hot or cold, it contains very few calories and tastes yumma.
- large mug of frozen petit pois
- handful of mange tout
- 1 large romaine lettuce
- 3 spring onions
- 2 mugs of fresh chicken stock
- large handful of chives
Simply roughly chop the lettuce, and finely chop the mange tout, spring onions and chives.
Bring the chicken stock to a simmer and throw in all the vegetables. Simmer like this for about 5 minutes and then leave to cool for a few minutes. Whack into the blender and pulse until your desired consistency.
I added a sprinkling of parmesan, and some additional chives. Easy, cheap and good for you. What’s not to love?
