Chicken salad to remember

I am trying to be carb free in the evenings at the moment. But I really couldn’t bear the thought of a boring salad. Fear not – this salad is one for the repertoire, carb free but stuffed full of goodies including bacon, eggs and a dressing you will just adore. It’s healthy and guilt-free but you don’t feel cheated either because it’s so numma!Β 

For two people you need:

  • 2 chicken breasts
  • salad leaves
  • 5 or 6 cherry tomatoes
  • handful of frozen petit pois
  • 2 slices of pancetta
  • 2 eggs
  • 1 egg yolk
  • olive oil
  • 2 anchovy fillets
  • handful of parmesan
  • garlic clove
  • half a lemon
  • S&P

The beauty of this is you probably will have some eggs in the larder, some peas in the freezer, a loose lemon lurking and some cherry tomatoes too… well I usually do. Grab the chicken breasts and sprinkle with plenty of salt and pepper and then cover in baking parchment and bash flat with a rolling pin. Drizzle with olive oil and fry on a griddle pan for 4 mins on each side.Β Meanwhile, grill the pancetta, boil your eggs for 6 mins, and pour boiling water over your frozen peas and leave to stand.

To make the dressing, bung your egg yolk, the chopped anchovies and garlic into the magimix and whizz. Drizzle in about 2 tbsp of olive oil as if you were making mayonnaise, and then add the lemon juice and handful of parmesan.

All that’s left to do is, combine the lettuce, toms, peas and pancetta. Top with sliced chicken and boiled eggs and drizzle over plenty of dressing.
