Sweet potato hash browns, eggs and spiced yoghurt

I am going on holiday in August and so thought I better up my exercise. I bought Josie’s 21 day fat burn which I am trying to do first thing in the mornings and I’ll let you know the verdict. This Saturday, I was off on a hen party, so I got up early (unheard of) and did my workout, before fuelling up for the day ahead. This brekka is filling, healthy, and most certainly delish.   • 2 eggs
  • half a sweet potato
  • 1 tbsp of yoghurt
  • half a lemon
  • a few strands of saffron
  • 1 tsp of turmericย 
  • coriander
  • coconut oil

First things first boil the kettle and soak the saffron strands in 1 tbsp of boiling water. Sweet potato hash browns, eggs and spiced yoghurt Peel and grate the sweet potato, either by hand or in the magimix. Sweet potato hash browns, eggs and spiced yoghurt Beat 1 of the eggs and combine with the potato and lots of salt and pepper and then heat the coconut oil in the frying pan. Using a dessertspoon form little cakes and fry for about 4 minutes on each side. Sweet potato hash browns, eggs and spiced yoghurt Meanwhile, combine the juice of the lemon with the saffron and its water, yoghurt and turmeric. ย Poach your egg using the whirlpool method and then arrange the sweet potatoes on a plate.
