If you are like me, weekend breakfasts are something to look forward to and nearly always focus around eggs. I am already planning one serious egg-feast for tomorrow, but in the meantime I wanted to share one of my favourite brekka recipes as inspiration for Saturday morning. I posted a pic of this a while ago on Instagram, but this makes the ideal protein packed post work-out fuel but better still why not just try it as an alternative to a fry up. I don’t think you’ll be disappointed.
All you need for one person is :
Make your romesco sauce, or pull the batch you made earlier in the week out of the fridge.
Toast your vogel and spread it with butter (if you are trying to be healthy the butter isn’t essential.) Meanwhile poach your egg by cracking it into simmering water, which you have created an almighty whirlpool with. Leave for 4 minutes before removing with a slotted spoon. Then all that’s left to do is slather on a dollop of romesco, top with the rocket, poached egg and another dollop of romesco on top.
Add a bit of S&P and break into that runny yolk. Now if that aint numma I don’t know what is.
