We had lots of leftover lamb from the dinner party, but I am not a fan of cold lamb at all. This recipe is a real winner and such a great way of using up leftovers. Ultimately you can use whatever might be in the fridge, but but we went for the following…
- leftover lamb chopped into pieces
- natural yoghurt
- large handful of fresh mint
- seeds of a pomegranate
- leftover green beans
- cherry tomatoes
In a frying pan heat up some oil in a pan until nice and hot. Throw in the leftover lamb pieces and fry until slightly crispy. Meanwhile combine the yoghurt with the mint and put everything else into bowls on the table.
All that’s left to do is wrap up some lamb with all the other bits and pieces and scoff. It’s absolutely yummy, so simple and costs very little.
