Let’s get freekeh

Freekeh… It’s quite new to me but I love it! A bit like pearl barley but slightly tougher, I buy it ready cooked from Merchant Gourmet. This is a delicious but substantial salad, perfect to accompany BBQ meats or to be enjoyed on its own…It’s also a great base for using up what you have in the fridge!

  • 2 large tbsp of freekeh
  • 5 or 6 tomatoes on the vine
  • 1 courgette
  • 2 roasted red peppers (or roast some peppers yourself!)
  • juice of half a lemon
  • glug of olive oil
  • chives
  • 2 spring onions
  • 1 egg
  • parmesan

Get the oven on to 200 and grab your vine tomatoes and bung them in on a baking tray. Whack the kettle on and get her boiling, then use that water to boil your egg for 6 minutes. Grab your spiralizer and push your courgette through and then using the rest of the water steam it until tender, for about 5 minutes. Courgetti and Freekeh salad Chop up the peppers and spring onion and then warm your freekeh through (I used the microwave but you can do this in a pan of boiling water.) Combine the steamed courgetti with the freekeh, spring onions and peppers. Grab your tomatoes out of the oven and push them of the vine and add them to the mix, crushingΒ  them with the back of a fork.
