Feed a cold they say… Foxy’s carbonara is the perfect comfort food for when you aren’t feeling 100 and only pasta will do. It also works well as an easy dinner party recipe you can whip up last minute for friends.
For 4 people you need:
- 500g of fresh pasta
- lardons (you can’t really have too many!)
- 4 tbsp of double cream
- 3 egg yolks and 1 whole egg
- large handful of parmesan plus extra for the top
- a small handful of frozen petit pois
- 1-2 courgettes
- 1 onion
- 2 cloves of garlic
First thing to do is dice up your onion finely, cut the courgettes into batons and whack into a frying pan with the lardons. Keep it on a fairly low heat and cook her for about 10 minutes before adding the garlic. The lardons should begin to crisp and the courgettes and onion should be cooking in the rendered fat.
Add the egg yolks, egg, parmesan and cream to a bowl and whisk with a fork. Whack the pasta on the boil and add the frozen peas to boil in the pasta water too.
Once the pasta is cooked, transfer two tbsp of water into the lardons mix and then drain. Mix the pasta with the lardons mix in the same saucepan you cooked the pasta in. Turn off the heat and pour in the egg and cream mix. Stir until its all combined.
Dollop into bowls and top with extra parmesan. If you are feeling really sorry for yourself have it on your lap in front of the tel.
