Bircher muesli

This breakfast recipe is totally inspired by Cuckoo Foods. I tried their muesli when I won a competition and I have since been obsessed because it is INCRED. This is my take, which is so simple and requires very little effort.

For 1 person you need:

  • 3 tbsp of rolled oats
  • 1 tbsp of almond flakes
  • 1 dessertspoon ofΒ chia seeds (optional)
  • 1 glass of almond milk plus a bit extra for the next day
  • 1 tbsp raw honey
  • fresh fruit

Last night I put my oats, chia seeds and almond flakes into a bowl and then poured over the almond milk. Then you just cover with cling film and bung this in the fridge overnight.

I like having brekkie at work because I needΒ to have some time between waking up and eating, so I transported my bircher to work.

At the other end, all I did was add the honey and another splash of almond milk and gave it a mix.

At Embankment tube they have a juice and fresh fruit stand every morning, so I picked up some plums and a punnet of raspberries.

All you then need to do is arrange your fruit on top and tuck in.
