Try this light lunch! It’s nice and healthy, very moreish and vegetarian!
For 1 person:
- 3 large lettuce leaves (either romaine or cos)
- roughly 100g of ricotta cheese
- 3 spring onions
- large handful of mint
- large handful of coriander
- juice of half a lemon
- 1 small avocado
Make your herby ricotta by softening your cheese with the back of a spoon. Finely chop all the herbs and spring onions and add to the cheese with a hefty grind of salt and pepper and the juice of half a lemon. Continue to beat with a spoon until combined.
Slice up your avocado and then dollop the herby ricotta into your lettuce leaf and top with slices of avo. Roll them up or fold in half and devour. If you wanted something more substantial you could easily replace the lettuce with ryvita, bread or an oatcake. So numma.
