If this isn’t a go to supper recipe…. it should be. It takes all of 5 minutes to make. Carb free and good for you, what’s not to like?
- 2 free range eggs
- asparagus spears
- smoked salmon
Put the kettle on and when boiled get the water into a pan. When you have a rolling boil, plonk your eggs in and time them for 5 minutes. While the eggs are cooking, steam or boil your asparagus so that they are cooked but remain al dente. Leave the asparagus to cool slightly, running cold water over them if you are impatient, and then wrap smoked salmon around the top of the spears.
Dip into your perfectly cooked eggs, and transport yourself to egg heaven.
