Quick office lunch

Sometimes the old school recipes are the best and going back to basics isn’t a always a bad thing. While this blog post may not involve any technical skill or an innovative recipe, I thought I would share this office lunch number just in case any one was looking for some lunchtime inspiration. I know I always am in search of alternative and healthier ways to enjoy the classics and this ties in nicely with #meatfreeweek.

All you need:

  • half a tin of tuna in water
  • half a tin of sweet corn
  • 1 levelΒ tablespoon of mayonnaise
  • 2 spring onions finely sliced
  • lettuce – cos, romaine or something similar

Mix together all the ingredients for your tuna mayo with a fork and then season according to taste.

Then instead of using to fill a sandwich, pile this mix onto a lettuce leaf and enjoy. Low calorie, delicious and definitely counts as partΒ of my PLI diet.
