Re-using ingredients

These days you can never buy food for 1 (I find this very very annoying) so I had to buy 2 salmon fillets, a huge bag of cavolo nero and 6 eggs at the beginning of the week. I hate waste, so here is how I used the same ingredients that went into my 1 egg frittata with salmon to create this simple supper.


  • 1 salmon fillet
  • 4 cavolo nero leaves
  • 1 egg
  • chives
  • Nandos hot sauce  (not my usual choice, but this is what they had in the local newsagents and I would really recommend!)

All I did was, cook the salmon in foil as recommended in my slimming salmon post. 


Then steam the cavolo nero leaves for about 5 minutes until lovely and tender and fry an egg in minimal amounts of oil (this is meant to be a low calorie supper remember.)


Then all that’s left is to arrange the cabbage on the plate, top with the flaked salmon and your fried egg and then sprinkle over chives and hot sauce. Yum scrum.
