These babies are so easy to make you can have them any night of the week. Who doesn’t love a pancake, whether its for breakfast, pudding or an indulgent snack? What’s better, this recipe has no refined sugar in it at all!
This recipe makes about 15 scotch blueberry pancakes, and all you need is:
- 1 egg
- 1 cup of self raising flour
- 1 cup of milk
- 1 punnet of blueberries
- olive oil or butter
All you have to do is measure out your flour into a bowl and add your egg.
Whisk this slightly, while adding in your cup of milk until you have a lovely smooth batter.
Fold in your blueberries, reserving a small handful to use at the end. Very lightly grease a frying pan/melt your butter and fry for about 1 minute on each side in a hot pan.
I topped mine with fresh blueberries and honey because I felt like something pretty sweet, but yoghurt, maple syrup or lemon and sugar would also be good accompaniments.
The warm blueberries burst as you cut through these pancakes. A seriously numma little recipe.
