Sunshine salad

If you have been following me on InstagramΒ you’ll know that last night I indulged in my friend’s most delicious birthday supper, finishing off the evening with not 1 but 3 slices of red velvet cake. Woops. So today I felt the need to be healthy, and created this sunshine salad to cleanse my conscience.

All you need is:

  • a handful of cooked prawns
  • 3 spring onions
  • 5 cherry tomatoes
  • 1 red grapefruit
  • half an avocado
  • handful of sweetcorn
  • 1 tablespoon of natural probiotic yoghurt
  • a glug of tabasco
  • handful of rocket
  • seeds from half a pomegranate

All you have to do cut away the peel and segment your grapefruit, squeezing about a tablespoon of juice into a bowl.


Finely dice you tomatoes and spring onions and add them to the mix along with the chopped avocado, sweetcorn and prawns. Add your dollop of yog and tabsasco and combine. This mixture (minus the avo) would benefit from sitting in the fridge over night and then travelling to work in a tuppaware, but I didn’t have time last night.

Office lunch recipe

Arrange your prawn mixture on top of a bed of rocket and sprinkle over some pomegranate seeds. Find a nice sunny spot and settle down for lunch.
