Simple soup supper

Last night, I didn’t get home until 8.45pm. I was hungry, a bit chilly and needed sustenance. I quickly decided to whip up this soup – just the ticket for a speedy late night, healthy, supper as it used ingredients we keep in the cupboard. Ideal.

All you need:

  • some green vegetables, I had some leftover raw broccoli
  • a handful of mushrooms
  • a handful of raw prawns
  • 1 heaped teaspoon of tom yum paste
  • a glass of chicken stock
  •  coriander
  • juice of half a lime

Cut up your broccoli into nice small florets. In a saucepan mix together the stock and tom yum paste and bring to a gentle simmer. Throw in the mushrooms and broccoli and cook until tender, for about 3 minutes. Chuck in your prawns, and cook until they have just turned pink about 1 minute (depending on the size) making sure not to boil the soup.

Ladle into your bowl and top with coriander and a squeeze of lime. A warming antidote to a stressful Monday.
