Monday lunch salad

The sun is shining today and it’s the first time in ages I haven’t felt I deserve a hot lunch…so I nipped off to the supermarket to grab the ingredients for a salad. I made this number in the office in all of 5 mins, and it cost a mere £3.70 (or £7.40 for two lunches…I’ll be having it again in a day or two.)

Ingredients for a filling portion:

  • half a pot of Good4U radish sprout mix – this brand is sold in Tesco’s and other leading supermarkets, and I sometimes fancy these as an alternative to lettuce leaves
  • a handful of black olives
  • half a tin of sweetcorn
  • a dollop of cottage cheese (don’t bother buying the low fat stuff as the full fat cottage cheese is very low in fat naturally, and I can be a bit sceptical of low fat foods…)
  • 2 slices of cooked ham
  • half an avocado
  • juice of half a lime

Ok… Busted! There is no cooking involved in this at all – all you have to do is combine all the ingredients together in a big bowl, then squeeze over the lime juice.

But I wanted to share this with you as it is totally delicious and so easy to make at work…it’s a bit peppery from the sprouts and yet creamy from the cottage cheese. Mmm mmm. With no salad dressing or oil, it’s also a healthy little number too.
