David Fletcher’s pasta

I know it’s not particularly on trend to eat carbs of a Monday evening, but I have such a stinking cold at the moment and just really felt like easy comfort food. This pasta number is named after my sister’s godfather who made this for Dad once and has since been a family favourite.

For two people:

  • 200g linguini
  • 1 onion
  • 4 anchovy fillets
  • 1 head of broccoli
  • 2 cloves of garlic
  • 1 chilli
  • parmesan

Put your linguini on to boil. Roughly 4 minutes before it’s fully cooked, whack in your broccoli florets. Meanwhile, in a separate pan, gently fry the onion, garlic, chilli and anchovies until the mixture is all melted and soft.

Once the pasta and broccoli are cooked, chuck into the pan with the onion mix and a tablespoon of the starchy cooking liquid and toss it around so that it’s all coated in the sauce.

Season with a good grind of pepper, throw in a decent knob of butter and top with parmesan. The perfect recipe for someone feeling very sorry for themselves.
