I always find making a pudding for a week night supper such a faff, and inevitably, 9 times out of 10 I opt for chocolate to get my sweet fix. But last night I made this pudding in all of 15 minutes (10 of which you don’t have to do anything.) It’s refined sugar free, luxurious and low in calories!
For two people you need:
- 4 sticks of rhubarb – forced rhubarb is in season right now
- 1 thumb sized piece of ginger
- 2 dessertspoons of honey
- 1 teaspoon of cinnamon
- 1 star anise
Cut up your rhubarb and then add the other ingredients to the saucepan. Grate over the ginger and add about two tablespoons of water.
Simmer for about 10 minutes until the rhubarb has cooked and looks like a compote. Fish out the start anise and eat however you wish. I actually had this with natural yoghurt and toasted almond flakes. A health-conscious but numma pudding or even a zingy breakfast wake up bowl.
