Valentine’s lunch in the Isle of Wight

This weekend we have all headed to Bembridge in the Isle of Wight for our friend Sam’s birthday celebrations.

The rugby was the focus of the day and so I took the opportunity to whip up lunch for everyone. We had bacon and saussies at at about 11 so I decided to do a bit of a healthy salady affair.


The first salad was a simple chicken number. For 10 people I used:

  • 7 chicken breasts
  • juice of 1 lemon
  • glug of olive oil
  • sprinkle of paprika
  • 6 spring onions
  • 2 baby gem lettuces
  • 2 whole curly leaf lettuces
  • 1 pot of cress
  • a punnet of cherry tomatoes

Firstly, as always, whack that baby on to 180 degrees. While your oven is heating up marinate the chicken in some olive oil, lemon juice, tarragon and paprika. Cook your chicken breasts for 25 mins (mine were absolutely huge ones, but if smaller you could probably cook for less than 20) and then leave to rest. Chop and combine with the all the other ingredients. Ned kindly made a dressing from olive oil, balsamic vinegar, salt, pepper and a dash of mustard.


The other salads were more simple. For the Asian broccoli salad you will need:

  • 3 broccoli heads
  • 1 large clove of garlic
  • 1 chilli
  • sesame oil
  • soy sauce

I steamed the broccoli for 5 minutes until it was just tender. Then you need to heat up the sesame oil and a bit of olive oil in a wok. Add your garlic and chilli and whizz around in the oil for a few seconds, before adding the broccoli and allowing it to charr in places. Whack in a bit of soy and give the broccoli a good coating.


The final salad was just some roasted butternut squash, in olive oil, salt and pepper. Cook it for 40 mins at 200 degrees until the skins have caramalised. Lily kindly pulled together an incredible cheese board and we all sat down and scoffed our lunch while watching the rugby.
