National breakfast week

This week was national breakfast week so I thought I had better post something breakfasty before it’s over.

After a great drinks party last night I whipped up this hangover curer as a pre-breakfast smoothie. For those who are green smoothie averse this is honestly really yummy and the saltiness is exactly what you need after a fun Saturday night.

But actually, atΒ home we have it as a starter in the summer as alternative to gazpacho, really easy and delicious.

For two you need:

  • 1 ripe avocado
  • half the juice of a lemon
  • 1 pint of chicken stock (using the stock I made during the week)
  • a good sprinkling of aromat

Chop up your avo and bung it in your blender. I used a nutribullet which is so easy and works really well.

Add your stock, lemon juice and aromat and blend.
