Sussex breakfast

Eggs for breakfast. Is there anything better? This recipe is one of Aunty’s (Mum’s twin sister and cook supremo) and is a great way to do a pared back cooked breakfast for lots of people.

It means you can enjoy a cup of coffee and not stand arduously by the frying pan for 15 mins in the morning.

What you need for 3 people:

  • 6Β  slices of ham, I used a mix of parma ham and roast ham
  • 6 eggs
  • bread for toasting
  • salt and pepper

Get your oven on and heat her up to 180ΒΊc. Then all you have to do is lightly grease your muffin tray and then arrange your slices of ham like cup cake holders inside.

Crack in your eggs. We actually used the eggs from our Bantams: Barbara, Elaine and Sheila, as it’s always great to know where your food comes from when poss.

Sprinkle on some salt and pepper and bake in the oven for 8 minutes.

While your eggs are cooking, toast and lavishly butter your bread. When they are done your eggs should be runny and the ham nice and crispy. Enjoy two eggs pots on a piece of toast. Yum scrum. Otherwise, for a mid week lunch, allow two to cool and have for lunch at work with a salad.
